Easter Eve

We had a great fhe with the kids on Thursday night....we showed this video clip and once again, my heart was filled with  gratitude for my Savior and His love for us.  Looking forward to attending church tomorrow and spending time with our family.  We're having easter dinner here tomorrow.  Today I'm busy baking cakes. My mom's sour cream pound cake is an easter dessert tradition.  See the recipe below.   





Sour Cream Pound Cake:
2 3/4 c. sugar
1 c. butter
6 eggs
3 c. sifted flour
1/2 t. salt
1/4 t. baking soda
1 c. Sour Cream (or buttermilk)
1/2 t. lemon extract
1/2 t. orange extract
1/2 t. vanilla
Cream sugar and butter til' light and fluffy.  Add eggs one at at time beating well after each addition. Sift together flour, salt, soda.  Add to creamed mixture alternately with buttermilk beating well after each addition.  Add extracts and vanilla.  Beat well.  Pour into greased and floured 10" bundt pan.  Bake at 350 for one hour.  Start checking at 50 minutes into bake time.


Frosting:
Aprx. 4 cups powdered sugar (1/2 the bag) 
1/4 c. butter
Gratings from one orange peel
Using fingers to sift, coat sugar with butter and orange peel.


Slowly add the juice from one orange (using hand mixer) mix well and then add a little whipping cream (until frosting is the right consistency).  Then mix in 1/4 t. almond extract and 1/4 t. vanilla.
